Isot

Isot, also known as Urfa biber, is a type of dried chili pepper originating from the Urfa region of Turkey. It is renowned for its dark, almost black color and rich, smoky flavor with a hint of sweetness. Unlike typical red chili flakes, isot undergoes a unique drying process where the peppers are first sun-dried and then wrapped overnight to preserve moisture, giving them a softer, slightly oily texture.

Isot is moderately hot, with a heat level that is milder than many other chili peppers, making it versatile in cooking. It is commonly used in Turkish cuisine to season meats, stews, and various dishes, adding depth and complexity to the flavor. The pepper is also popular as a table condiment, often sprinkled over foods like kebabs, salads, and soups.

Its distinctive taste and aroma have made isot a favorite ingredient not only in Turkish kitchens but also among chefs around the world who seek to incorporate its unique flavor profile into their culinary creations.
